That scene would have tied perfectly into the Gandalf/Galadriel scene in AUJ where he says Bilbo gives him hope, which is exactly what he does here.

And that version of A Hobbit's Understanding sounds like it comes from Moria (specifically the track Gollum on the CR).

I hate the way these docs play with history. They put up the May 2011 date in the beginning, but then show filming with the replacement actor for Thrain hired during DOS pickups

Yeah I wish they would give the actual chronology and openly discuss when things were changed and why. I don't think it is hurtful or particularly unbecoming of the film makers to tell about the process as it actually happened.

Interestingly they do not talk about adapting the book as its own documentary in any of the EE documentaries. This material is sprinkled all over the individual featurettes so we never actually hear how they began their work and how it evolved from start to finish and what was adapted and moved about. I would love to hear their justifications to all those deviations from the novel (or other source material they claim to have used).

Well I'm sure the rest of the Dol Guldur stuff including the battle was filmed in May 2011, but the new Thrain stuff wasn't!

There was an extra bit where Thranduil is talking with Gandalf (though maybe not to Gandalf) about wanting his White gems retrieved in the appendice "The King of Wood and Stone"

That was where Sauron was going to Rhun off to after Dol Guldur in early concepts.

Because PJ was a fool, but an honest fool he remained and listened to the blood curdling cries of the fanboys and girls and changed his mind!

But I would not have squandered time and energy on such an ephemeral plot thread as Sea of Rhûn, not even on conceptual art level.

So if Sauron wiped the floor with him the first time 10-0, Gandy thought taking him on again would make a difference? "Come Sauron, I caught you a second time. The rules say you havet o surrender now." It is like the English bobbies in the old television series where their mere authority and shout "stop" would make thieves and robbers stand frozen out of sheer respect and cry "right-o guv. You nicked me!". ;)

Honestly when Sauron fled to the East he didn't hide around the next corner. The whole point was to get away and hide from the White Council. I doubt Gandalf wandering to and fro through the wide East would have helped.

So I still think it is a silly and futile plot thread to try to shoehorn into the Hobbit. Makes absolutely no sense. They write and direct "The Wanderings of the Grey Pilgrim" later.

But I guessing I am going to see this stuff discussed in the Appendices of BotFA EE?

Boyens originally wrote that as a joke, but PJ wanted to include it anyway.

PJ is not a very discerning fellow is he. Everything suggested gets put into the script right away, shot half-through and then decided against.
