Spielberg talks about Ol' Johnny Boy at 7:48. Spielberg says that, because of the rushed scheduling, The Post was one of the few films in his collaboration with Williams where he went to the scoring sessions having not heard any of the musical sketches beforehand.

But seriously, it's common at that age to have sporadic days where you're more tired/fatigued than others. Just look at that 2013 video for The Book Thief then compare it to his Tavis Smiley interview two years later.

I'm tired every day and I'm not even 30!

 

For all we know they grabbed Williams right after he finished the sessions and recorded this in a broom closet, or first thing in the morning before he'd had his coffee.

Bridge of Spies. When he heard it being performed - that's when he replaced Williams with Thomas Newman.
