For my next meal I'm going to try something new.try some swiss steak.get some round steak, flour it and in your pressure cooker fry on both sides for about 3 min on each side, then drain the oil and place the meat back in the pressure cooker. add a can of beef broth, low sodium works best. The add a can of diced tomatoes, a stalk of celery sliced thin, and one one sliced into rings, cover and cook for about an hour and a half. it will make it's own gravy and the meat will fall apart.about to put the skirt steak on.

Did it, though, since I'm trying to put on a few pounds. That kinda stuff always seems to help. Had some fried potato slices with bacon bits on the side. Followed up with a big salad. Partly for digestion, partly because I love salad. Lots of romaine, baby spinach and broccoli, topped with a bit of tomato vinaigrette and black bean and corn salsa mixed in. Mmm.

It's not as succulent with beef, but it's cheaper than veal.My favourite is actually ground chicken meat.A proper recipe for bavarian meatballs would be:80g white bread without crust100ml Milk1 small onion250g ground pork250g ground veal/beef2 eggs1-2 teaspoons of Dijon mustardMarjoramnutmegLemon peel1-2 tablespoons of parsleySalt & pepperJust dice the onion and the white bread, and soak the bread with the milk, and mash everything together.

I always take half an onion in dices, one or two cloves of garlic, half a glass of white wine, a teaspoon of sugar and a 500g can of pureed tomatos, and let that cook for half an hour or longer, until all the liquids are gone and has a thick consistency.Then I add salt and pepper, and either a cup of cream for pasta, or some quality oil and lemon juice if I want to have it on bread or a piece of fish.Sometimes I add more spices, but I feel they only take away from the pure power of the reduced tomato.
JoeinAR 1,957 Posted April 13, 2012 Posted April 13, 2012 Im going to buy a tri-tip roast today, marinate it in soy sauce, garlic, orange and pineapple juice, and some brown sugar until Sunday. Then I'll grill it and make fajitas with it. It's a great substitute for skirt steak which is more expensive and harder to find.I'll make a nice salsa with some fresh roma tomatos, cilantro, bermuda onion, and cukes, and some fresh guacamole using lemon instead of lime.

But keep the water.Then diced 2 big potatoes, and chopped an union. And put those in the water I boiled the chicken in. Add salt, pepper some thyme, and other herbs to choice. Bring once again to a boilWhen the chicken has cooled down a bit, strip as much of the meat (and skin if you prefer) from the bones and add it to the pan. Let the mixture boil untill the water has reduced and the potatoes are nice and soft.Cook some pasta (penne for example) separately.Enjoy

I'm marinating chicken wings in buttermilk, then I will korean fry them tonight. Homemade french fries and homemade ranch dressing.I found the tri tip today so I've got it marinating in pineapple and garlic and soy, but that will hit the grill tomorrow night. we'll have them fajita style with grilled onions and peppers and a homemade pico de gallo.
