The blippy phaser beams different don't bother me. I couldn't care less how Superman holds his arms while flying.And I'm going to guess that the TV series budget couldn't make a man fly convincingly, so jumping over buildings became his preferred method of travel. The Salkinds had a much larger budget than the TV shows, and so Superman was able to fly instead of simply jump.

It doesn't bother me how Superman flies or takes off. He took off differently in Smallville. I'll go into Man of Steel far more receptive to the changes than I will this Saturday watching Star Trek Into Darkness.
