tonight I'm making meatball stew for tomorrow ,

I'll roll a couple pounds of hamburger that I've seasoned with just salt, pepper and garlic. I will cook those in the oven for about 20 minutes just to render the fat.

Meanwhile:

I will caramalize some pearl onions, then sautee in some celery and carrots, I will add a few cans of beef broth, some kitchen bouquet.

I will add the meatballs and let them simmer for about 3 or 4 hours.

then I will thicken the broth with cornstarch to make a nice gravy. we will eat over butter rice.

as for tonight, we'll have quite a few trick or treaters so I will probably just pick up some KFC

You mean Coriander?

NO, cilantro is the leafy plant, coriander is the seed. very different in flavor.

saffron is very very expensive(the most expensive in the world), but a tiny amount goes a long way. Tumeric is a substitute different in flavor but does color the dish similarly.

One of my absolute favourite recipes with chicken and saffron is this one:

1 whole chicken

For the marinade:

2 teaspoons ground coriander

2 teaspoons ground ginger

2 teaspoons ground cumin

4-5 tablespoons olive oil

black pepper

salt

Mix all the marinade ingredients

Cut the chicken into four pieces (two breasts, two drumsticks), put them in a plastic bag (or bowl), add the marinade, rub it in, and let it soak in over night.

Then you need:

2 fennel bulbs

2 large onions

1 handful of cilantro

4 cloves of garlic

2 pickled lemons

70 g olives

some saffron

1/2 litre of chicken broth

Cut each fennel bulb into 8 pieces. Cut the onions into thicker pieces. Cut the stems off the cilantro. Cut the garlic into slices.

Heat a large pot, put in 2 tablespoons of oil and roast the chicken pieces on all sides for 5-10 minutes. Take them out of the pot, put in the fennel, onion, cilantro stems and garlic, and roast them as well for a few minutes.

Add the chicken, the whole olives, the chopped pickled lemons and the saffron.

Add the broth.

Close the pot so that no steam escapes and let it simmer for 1 1/2 hours. Stir occasionally.

Then scrape the meat off the chicken, chop it, and put it back into the pot. Season to taste with salt and pepper, and the leaves of the cilantro.

All were REALLY good, but the Honey Buffalo were my favorite. Amazing, among the best wings I've ever had.

Got a free UFO Pumpkin beer too, which was also really good (and I don't normally like pumpkin beers at all)

Goddamn I need to learn how to cook. I can make pancakes and cake, and that's about it.

get yourself a basic cooking book. go to a used bookstore and find an older Better Homes and Garden cookbook. The older ones are not clutter by attempts to make healthier and less tasty versions of classic recipes.

Use quality ingredients. Never use anything but butter or real margarine, spreads are not margarine or butter and are awful products.

Use corn or canola oils. Never use olive oil to fry, Reserve it for dips and marinades, as it has too low a burning point.

Remember when buying hamburger the cheaper 70-30, 73-27 hamburger is actually the best meat. The so called ground chuck and ground round/sirloin are never what they are called, they are just 80-20, 85-15, or 90-10. The lower the fat content in ground beef the tougher and dryer it will be.

Fresh veggies are best, then frozen, then canned. Always drained canned veggies and add your own water.

When making homemade tacos don't buy taco seasoning, make your own, you can easily eliminate much of the salt in your mix and still make great taco's.

Never buy low fat/no fat or lite versions of cheeses. They are poor quality products loaded with salt. Some cheeses are naturally low fat, those are fine

Never buy low fat/no fat mayo or sandwich spreads. Get the real stuff and just use less.

Drink 2 % or whole milk, it's the best source of calcium and your body absorbs calcium from it much much better than from pill supplements.

Use lots of onions, celery and garlic in your recipes.

Start with the basics before you try the harder stuff.

Learn to cook eggs by soft scrambling them, frying them over easy, and by poaching. Get those down and you'll be on your way.

Dave wants to go eat at Paula Deens, we might have to head to Mississippi tomorrow. It costs 12.99 a person at lunch, and 21.99 for a person for supper, beginning at 4pm. The trick is to arrive at 3:45/3:50 pay the lunch price but eat the dinner buffet. The waitress let us in on that trick on our first visit a few years back. Her cornbread dressing is damn near perfect, almost as good as mine.

I have a couple of friends who have their own saunas, and I used to live in an apartment that had one in the basement that everyone in the building was free to use. lots of parties there... good times.

I don't know about finland but I've never seen a public mixed sauna (in wellness centers, swimming halls etc) here.

They seem to be very common here. (though the wellness centre I frequent does have a weekly "ladies day")

The thing is that it really isn't very erotic. Everyone is very relaxed and at ease. The usual tension associated with nudity is completely gone.

For those who don't know it is the steam and the associated heat in a sauna in finnish.

Northerners with saunas.

Personally, I've been in a sauna once and I found it terribly unpleasant. Maybe if I went living up there I'd end up changing my mind.

since it's cold tonight I'm doing chili, I do add beans to stretch it, but I add navy beans since I like them best and they somewhat disappear in the chili.

I made chili yesterday, sweet potato chili, in the crock pot. Our kitchen smelled like heaven all day (though that also could have been because Marcy made Green Tomato Relish with all the tomatoes we took in from our garden before Sandy came by)
