I don't like to cook with red onions, I prefer them raw. I like a good Vidalia but I doubt Stefan has access to those. But a Texas sweet or Hawaiian sweet or Peruvian sweet work. And with that dish I might have gone with a shallot.

I love Brussels sprouts but I only cook them for myself.

Friends of ours brought over a deer they shot, so we had roasted venison loins with homemade thyme gnocchi, brussel sprouts, pancetta and yam.

I thought you were vegan?

Good God no. He's still an omnivore. He needs to come to my house and he will OD on red meat. Steaks burgers bacon pork ham chicken and turkey. No fish.

Lots of veggies and beans.

Friends of ours brought over a deer they shot, so we had roasted venison loins with homemade thyme gnocchi, brussel sprouts, pancetta and yam.

Someone tried to sell me 8 venison legs for $200. I said "Is that too dear?" :lol:

P.s. the fish pic looks great. Too bad I don't eat fish, or I'd pop over.

Good point, but even though I don't eat meat, or fish, I can still appreciate a well-put-together dish. The picture is aesthetic, even without the food being appetising.

Brussel sprouts are one of the more expensive veggies right now.

Since I'm off until the 29th I plan on going nuts in the kitchen. I found a beautiful skirt steak which I will marinate along with chicken breast to grill for fajitas. I am craving spaghetti and meatballs. I want to make some holiday foods too. I want to make a meat pie like Stefan and Ren discussed elswhere. I will buy a fresh turkey tomorrow. I will make cornbread Sunday for our dressing on Christmas. It will be perfectly stale when I prepare the dressing. Being stale allows it to take in more moisture.

Oh yeah I want a mess of fried potatoes (not the same as french fries) this weekend.

437 F. That's right in the range for roasting veggies. Usually I tell when something's done or cooked enough because it's black or smoking.

I do brussel sprouts by cutting them in half, removing the stalk, dividing each head into the individual leaves, and adding them to potatos, pasta, or on their own in a pan with some butter or/and oil. That way, they're done super quick, and I don't need to stink up the place by boiling the shit out of them.

In fact, I had a chestnut soup the other day with some sautéed sprouts.
