Tons. They're in 13 parts, about 20 minutes each, so more than double the amount of time to tell the story of the film.
The beginning of the film narrative with the Star Destroyer and Blockade Runner doesn't even come until halfway through the third episode.
1st Episode: ALL Luke on Tatooine with Biggs and his friends and Owen and Beru
2nd Episode: ALL Leia on Alderaan with her father (He wasn't named Bail at this point) and their connections to the Empire. Leia even has a diplomatic interaction with Vader, and there's a slimy Imperial Officer who wants to marry Leia to have a stronger link between the Empire and Alderaan.
A fun mini adventure with the Droids outside the Cantina An AWESOME Han Solo by Perry King (Who originally auditioned for the role in the film)... a totally different take - VERY intense and fun. You get the Jabba scene at Mos Eisley, but with another bounty hunter instead of Jabba. Lots of detail on the Force instruction aboard the Falcon and lightsaber training. An embarrassing extended mind probe torture of Leia by Vader - Leia's moaning is very over the top, and could be completely misunderstood by your neighbors if you have thin walls. More time on Yavin with Luke trying to convince Han to stay and fight. A subplot of Admiral Motti brown nosing Tarkin to try to secure more power for them both, ultimately convincing Tarkin not to evacuate the Death Star. An epilogue of Luke and Han sharing stories of what happened after the battle of Yavin, before they get their awards. (They really do a great job of building their friendship throughout the series).
This was also the first time at home listeners could hear the entire score in a different context. It was glorious. They had access to everything, as well as all of the sound effects libraries.
A first rate production.
Mark Hamill and Anthony Daniels are in them. Billy Dee Williams joins for the Empire one.
Empire's adaptation was shorter, only 10 Episodes.
Jedi is the weakest, and was done much later with I think 6 Episodes, and some questionable voice talent.

The Radio Drama actually explains it. Threepio most definitely knows who she is. Leia and Captain Antilles are aboard the Tantive IV (first place it was ever named, and not pronounced like you might think) and about to intercept the Death Star plans. They are programming the droids to go outside the ship to fake making repairs as an alibi for being in a restricted system. The droids are further programmed to protect the identity of Leia being aboard at all costs “that includes lying and self destructing”
So yeah, it’s suggested that Threepio was following Antilles’ override programming and lying to Luke.

Say what you want about the MCU's lack of thematic consistency and unmemorability of some of its films' music, but there are some films in it that have some pretty great scores. They are also usually very orchestral, much moreso than a lot of other modern films. Consider Patrick Doyle's Thor score, Alan Silvestri's Avengers score, Ghiaccino's Doctor Strange and Spider-man trilogy scores.

These 3.5 minutes are worth your time. John Williams got a birthday song and there are piano sketches of the Obi-Wan Theme played by JW himself. What I would give to hear this....

I very strongly feel that Ludwig's music in general does not sound like cookie cutter RCP. Using synthetic sounds does not automatically = RCP. He has his own voice and approach that sounds nothing like Balfe & co.

One of the things that irks me the most is the bait-and-switch its marketing perpetuated with Prequel era music. How many of us allowed ourselves to build expectations for hearing DotF, BotH, and friends after that first trailer--despite knowing full well that trailer music is rarely a reflection of the actual film/show score.
For a program that was supposedly a love letter to those who cherished the long-maligned Episodes 1-3, you'd think there'd be a willingness to draw from one of the few aspects of those movies that people unequivocally hold in high regard. But as it stands, we perversely got more Ep 1-3 musical references in Sequel Trilogy, which was at times insultingly blatant in its antipathy to the PT ("this will begin to make things right" -- ugh!), than in a show literally about the characters, themes, and unfinished business of TPM/AOTC/ROTS.
What are we left with?: some repeated minor trumpet chords and goddawful choral sample that maybe was intended to evoke Battle of the Heroes, and a variant of the Obi Wan theme that, by sheer virtue of the consistency of Williams's melodic language, kind of resembles Qui Gon's motif if you really want it to.
I've said it before, but how profound would a tiny hint of Across the Stars have been when Obi Wan was circumlocuting about Padme? This is what leitmotifs are for, stating in emotional terms what characters cannot in words, connecting events of the past to developments in the present, deepening a scene rather than simply underscoring it. How many other such opportunities for musical commentary, resonance, storytelling were missed?
If there's one thing that's slightly reassuring, it's that it's not just film score obsessives like us that feel like something was off musically. I've seen a heartening, if simultaneously depressing, awareness of the issue in the broader conversation around the show as well.
None of this, by the way, is to disparage Holt's music, much of which is fine scoring indeed, and a welcome addition to the SW musical canon (especially Young Leia's theme, the Mapuzo arrival, and Tala's death). She was dealt a difficult hand, moreso than I think many of us fully appreciate.

Nice. I'm eager to listen to the music on its own.
I hope we find out one day what happened behind the scenes with this score. It really does seem like John Williams' theme came at the last minute to replace Holt's own theme which she has said she did write one. Then William Ross was brought in to adapt JW's theme and give the series a more Star Wars sound. It suggests a lot of Holt's original material was scrapped.

It looks like a well curated album with the Holt & Williams/Ross material nicely put together. Excited about a listen apart from the show.
It does indeed look like some of the battle music in the episodes was replaced with music by Ross for a bit more of a 'Star Wars' sound.
