Yup. I was going to get something more fulfilling, but a friend made me to go this place where the fingers were really good...so that was that.

Pizza with onions, plenty of cheese and anchovies.

Raw onions or cooked? Important question. I love a good, crisp raw onion, but when they're cooked and get that nasty texture... no thanks. Much prefer scallions or leeks. And a ton of garlic.

I always put raw onions on a pizza. Does anyone cook them for putting them on a pizza? Sounds gross.

I love onions cooked when they are thoroughly roasted, and have caramellised. When the onions get slightly charred in the oven.

Is this a Belgium thing too? I had a couple of friends who were in or around Antwerp for a week. Can't remember if they made their way into the Netherlands or not, but they mentioned this "delicacy" to me when they returned. I just....I couldn't....

It probably originated with our Belgian cousins. If it did it is their great gift to our national cuisine.

Fries are one of Belgium's most famous dishes. The difference is that they fry them in cow kidney fat.

Fries are made with too much fat to put more fat onto them in the form of mayo.

Not much better to eat them with the ton of sugar that comes with ketchup.

I prefer mayo. With good oil, it's the healthier option. If not exactly low on calories ...

Ketchup on a burger is just.... something to scrap off.

Mayo yes, mustard, yes, barbecue sauce yes, Ketchup, only as a last resort,

I put cooked onions on a pizza, or onions that have started cooking so they get a bit of carmelization.

I'm about to make a pan of chicken enchiladas.

I had a pizza with capicolla ham mushrooms and caramelized onions. The pizza was pretty awful but it was were Dave wanted to eat. It is the worst "Italian" restaurant on the planet run by Pentecostals who haven't a clue. They make a great bread and nothing else.

I made quick spaghetti today, just a bit of hamburger, some sausage, onion, peppers, garlic, mushroom, tomatoes, and sauce with lots of cheese. just a one pot meal.

Then I made some a bakers dozen stuffed mushrooms with cream cheese, garlic, bacon, scallions, worchestershire sauce. I bake them at 500 degrees so the moisture evaporates and they don't braise.

no, good pasta can be bought cheap.

ain't nobody got time for dat.

besides I generally do not like any pasta other than spaghetti, or thin spaghetti, angel hair and the likes.

Do you ever make your own pasta? That's a great thing to do on a cold day.

Bloody hell, yes! I thought I was the only one doing that. :D

I also make my own (sourdough) bread. Too many people are buying too much stuff without much appreciation. Making your own heightens the appreciation so much.

I prefer ravioli or tortellini. Filled with a spoon of Ricotta cheese, topped with some butter, pepper and parmesan, I don't need much more.

Tonight, marking the beginning of my annual 14 day fast, I'll make slowly braised beef cheeks with rich sauce, minced peas and homemade fries.

The appreciation of what? Your own self-satisfaction and gluttony? The men who farmed the wheat fields? Mother nature? Gaia?

I buy dried pasta and spaghetti mainly because it's less time consuming. I'm not running a family restaurant here.

No, not self-satisfaction, but being conscious of the fact that food is the basis for your life. And appreciating the fact that you have the privilege of being born into the 10 % of the world population that is able to grab a box of pasta from a supermarket, and can afford not to lose a second thought about it; not being born into the other 90% of the world population, of which a big part is suffering, and even though being largely responsible for ensuring a major chunk of our lifestyle, is getting their land taken from them, their supplies limited to less than the bare existential minimum, driven into suicide, and are being exposed to chemicals that are so harmful that they are banne for use within Europe.

So when I prepare my food, I do it with the conscience that I'm not alone on this planet, and that somewhere in India, a rice farmer has to starve together with his family so that the rice I eat is as cheap as it is. I would think that is something worth remembering.

And some people wonder why the big Western nations are considered arrogant in the rest of the world.

I have not ever tasted homemade that tasted worth the effort. Perhaps if I cared for larger pasta noodles I might enjoy taking the time.

I boiled thin spaghetti drained it and then prepared the sauce in the same pot.

I had better things to do than take time to make homemade pasta. I'm not a baker, bread making has been my bane in the past. I can buy delicious bread at nearby bakeries.

Not arrogant in my case, just pragmatic. I'd love to have the luxury of time to be idealistic and as I lovingly rolled the dough on every naam bread, prepared the marinade for every curry, and netted some poor bluefin tuna in the Northern Atlantic, but it's just not practical or efficient.

You've gotta have a family recipie brought over from Calabria for it to be worth it.

I'm using semola di grano duro for pasta, it's a world's difference compared to pasta made from regular all-purpose flour.
