I don't really have any comparisons, but the recording on this compilation sounds great to me:

Not only do you get an all-star cast recording of the Carnival, but a wealth of other great Saint-Saens works, too.

Edit: That's a horribly steep price, you should be able to find it cheaper.

I have this one, it's pretty good (Yo Yo Ma featured in The Swan). But IMO the best part are the wonderful performances of the Organ Symphony, Danse Bacchanale, and Marche Millitaire Française. I also can't compare Carnival to any other recording.
