I have a pot luck tomorrow. I was going to bring Chicken Spaghetti but someone wanted to bring that so I made an old fashioned macaroni and cheese with a very creamy cheese sauce with 3 cheeses and topped with a thick layer of a white extra sharp Vermont Cheddar.

still it's one of those foods that I just don't care for. I make it well but even as a kid I never cared for it.

I double stacked it in a deep casserole dish rather than one thin layer, I filled it halfway then topped it with a ton of cheese, poured more mac & cheese on top and the added the rest of the cheddar.

right now I'm eating this cinnamon roll bread pudding someone made for breakfast. HEAVEN.

but Stefan it's marinated in vegetables and fruits. I think I will marinate some tofu in the same marinade and then fry it.

And G let Alice make answer for herself. She's quite capable of saying No in her own voice. .

Potatoes are wonderful,

they are wonderful steamed, boiled, baked, grilled, roasted, stir fried, pan fried, and deep fried.

Dave nixed Chinese since he's exhausted from mowing and doesn't want to go out.

My dear, let me give you one piece of advice. Potatos, rice, pasta etc are not all the same. They're all carbs, but they're different, not least of all in calories. 100g boiled potatos have 70 kcal, 100g pasta 350 kcal, and 100g boiled rice 125 kcal. A banana has more calories than a handful of potatos.

Of these three, pasta is the least valuable food. Rice (if it's a good, non-processed rice) is a very good source for minerals and keeps you filled for a longer time. Potatos are very rich in Vitamic C, B1 and B2, and of all vegetables, it has the highest and most valuable amount of essential proteins.

And this is between you and me (others would likely disagree) because from what I read in your posts, you're keen to get organic food. Most people think healthy eating is about calories or few carbs or whatever. In order to have a healthy diet, the most important thing is that the food is organic, meaning a very high bioavailability (which already excludes an abundance of meat). Equally important is that it has to be prepared properly in order to preserve vitamins etc, and that it is combined properly in order to be fully digestible (never mix carbs with protein). And the usage of spices and herbs helps greatly as well.

Of course, if you permanently eat more calories than you burn, you'll gain some weight, but that doesn't have to mean you're unhealthy.

If you keep a good diet, the right weight will come automatically. Excluding good carbs (not counting masses of pasta and white bread) doesn't do anything except depraving you of something.

If you have an active lifestyle (and something tells me you kind of do), a reasonable amount of potatos or rice every week is really not a problem. Having veggies with it keeps you longer filled, too. As a general rule, if you do eat very few carbs, then include slight more essential fats, either in the form of some nuts and seeds (even though you have your share of nuts at JWfan ;) ) or good oils. Pomegranate oil is very good or linseed oil, or a mixture of oils.

Eating mostly vegetarian (I do remember you having chicken though) is a very good basis, despite what anyone might say, you just have to do it properly and know a few things.

I'd be quite proud if you eventually left meat completely alone :)

I'm pretty sure North America is the only place you really find GMO foods. The rest of the world is for all intents and purposes "organic."

There's organic options here, but it's for quacks who still believe and perpetuate unfounded myths about organic vs. GMO. ;)
